Beat. 4 eggs very lightly, and add 1/4 cup of flour mixed smooth with
a little milk, pepper and salt to taste, add one cup of finely
chopped tomatoes, either fresh or canned; pour into a hot buttered
pan, and fry slowly. When done serve at once on a hot dish.
Pepperoni or bologna, optional
Toast the bread, then spread 1-2 tablespoons pizza sauce on each slice.
Sprinkle with garlic salt. Add several small slices of pepperoni or bologna,

4 flour tortillas
1 can of refried beans
1 cup Jack cheese, grated
1 cup cheddar cheese, grated

Preheat oven to 400 degrees. lightly grease a cookie sheet and place
two flour tortillas on it. Spread the tortillas with the refried beans.
Slice chicken into strips or cubes. Sauté chicken in a skillet
with salt,cumin,and coriander till done (about 10 min). Place cooked chicken
onto tortillas covered with beans. Place cheese on top of each tortilla
evenly then top each tortilla with remaining flour tortillas so it looks
like a sandwich. Place in 400 degree oven for 10 minutes or until cheese
has melted, and top is crisp. Cut with a pizza cutter, garnish, and serve.
Quick Chicken Divan Recipe
4 boneless chicken breasts, chopped/cooked
fresh broccoli (cut into flowerets)
1/2 lb. grated cheddar cheese
2 cans cream of mushroom soup
1/2 cup white wine (dry)
1/2 cup fine dry bread crumbs
2 tbs. melted butter
1) Microwave chicken breasts until cooked.

Quick Chicken Vegetable Stir-Fry
1 tbsp. vegetable oil
3/4 lb. skinless, boneless chicken breasts, cut into strips
1 lb. frozen vegetables or 4 cups cut-up fresh vegetables
1 can Campbell's Condensed Regular or Half Fat Cream of Chicken Soup
1/3 cup water
1 tbsp. Soya sauce
2 green onions, sliced
4 cups hot cooked rice
1) In large non-stick skillet over medium-high heat, heat oil. Stir
fry chicken until no longer pink. Remove from skillet; set aside.
2) In same skillet over medium heat, stir fry vegetables for 5-7
minutes or until tender-crisp.
3) Stir in soup, water, soya sauce and green onions. Bring to boil.
Return chicken to skillet. Heat through, stirring occasionally. Serve
Quick Meat Ball Stroganoff
1 pound ground beef
3/4 cup soft bread crumbs
1/4 cup water
1/2 teaspoon salt
dash of pepper
1 teaspoon shortening
1 can (10 ounce) mushroom soup
1/2 cup water
2 tablespoons ketchup
1 tablespoon minced onion
1 teaspoon Worcestershire sauce
1/4 teaspoon garlic powder
1/2 cup sour cream
Combine beef, egg, crumbs, 1/4 cup of water, salt, and pepper. Form
into balls about the size of golf balls. Brown on all sides in the
shortening. Drain of excess fat and push meat balls to one side of
pan. Add soup, 1/2 cup of water, ketchup, onions, Worcestershire
sauce, and garlic powder. Mix well. Simmer 5 minutes. Blend in sour
cream and heat thoroughly. Serve over hot rice or noodles.
This ground beef recipe serves 4 to 5.
Quick & Easy Chicken
6 skinned and deboned chicken breasts
1/2 cup green pepper or celery
1/2 cup onion
2 14 oz. cans chopped tomatoes
1 pkg. taco seasoning mix
1 cup long grain rice
1/2 cup flour
1 tablespoon seasoning mix
2 tablespoons oil
Heat oil in frying pan; coat chicken with flour and seasoning
mixture; fry for 15 minutes on low; add all the rest of the
ingredients, cover and simmer on low for 20 minutes.
Quick and Easy Tuna Casserole
Enough Mashed Potato to line a Casserole Dish
1 tablespoon butter
2 tablespoons corn flower
1 medium onion, chopped
1 can tuna, drained
1 can condensed mushroom soup
1/2 cup milk
1/2 cup grated tasty cheese
extra tasty cheese to sprinkle over top
Pre-cook mashed potato and line a casserole dish. Pre-heat oven,
moderate temperature. In a saucepan melt butter and add corn flower.
Once mixed to a smooth paste add mushroom soup and milk and bring to
the boil. Add tuna and cheese and mix. Add parsley. This mixture can
then be poured into the casserole dish and sprinkle the extra cheese
over the top. Place in the oven and cook until cheese is golden.
